1、备好食材:鸡腿去骨切块;芋头削皮洗净;再备好泡菜,大葱,老姜,大蒜,小葱;

4、芋头煮熟,捞出;
5、炒锅烧热,倒入适量植物油;
6、放入鸡肉煸炒至颜色发白,调入适量生抽,翻炒均匀后起锅;

7、另起油锅,放入干辣椒,花椒炒香后,再放入泡菜炒香;放入葱末,姜末,蒜瓣继续翻炒;
8、再放入郫县豆瓣酱炒出香味,之后调入适量白糖翻炒;
9、放入鸡肉翻炒;

1、取一块腊猪耳用温水冲洗浸泡,用小刀刮去猪耳表面的毛和杂质,准备小锅水,煮开后放入猪耳,小火慢煮至猪耳变软

7、处理好的虾虾尾朝上,两边分开呈人字形排列在粉丝上,两侧浇入调好的蒜蓉调味汁。入开水锅中蒸3分钟左右。
8、取出蒸好的虾,两侧洒上葱花。
